1Gently wipe any surface dust from the dried kombu with a damp cloth. Do not wash off the white powdery substance, as it is umami.
2Place the dried kombu in a pot with Water and let it rehydrate for at least 30 minutes, or up to several hours.
3Remove the rehydrated kombu from the Water, reserving the kombu-infused Water. Slice the kombu into thin strips, approximately 0.5 cm wide and 3-4 cm long.
