Soak the 300 grams of Dried cannellini beans in cold water overnight (at least 12 hours). Drain and rinse thoroughly before use.

Place the 400 grams of Pork rinds in a pot, cover with cold water, and bring to a boil. Simmer for 15-20 minutes to soften and remove impurities. Drain, rinse the Pork rinds under cold water, and carefully scrape off any remaining fat or bristles. Cut the Pork rinds into 2-3 cm pieces.

Finely dice the 150 grams of Yellow onion, 80 grams of Carrot, and 80 grams of Celery stalk to create a soffritto. Mince the 15 grams of Garlic cloves.
