1Begin by preparing the pork rind. Place the pork rind in a pot of cold water, bring to a boil, and blanch for 10 minutes. Drain and rinse thoroughly, then cut into 2-3 cm pieces.
2In a large, heavy-bottomed pot or Dutch oven, heat the extra-virgin olive oil over medium-high heat. Brown the pork ribs on all sides until nicely colored. Remove the pork ribs from the pot and set aside.
3Add the pork sausage to the same pot and brown well on all sides. Remove the pork sausage and set aside with the pork ribs.
