Wash the Water Spinach thoroughly under running water. Trim off any tough or discolored ends and cut the remaining stalks and leaves into 5cm segments.

Mince the Garlic finely.

In a small bowl, combine the Oyster Sauce, Light Soy Sauce, Granulated Sugar, White Pepper, Water, and Cornstarch. Stir well until the Cornstarch is fully dissolved to create the sauce mixture.
