1Soak the dried fava beans in cold water for at least 12 hours, or preferably overnight. Drain and rinse the fava beans thoroughly before use.
2In a large, heavy-bottomed pot or Dutch oven, heat 30g of the extra-virgin olive oil over medium heat. Add the chopped onion and cook gently until it becomes softened and translucent, about 8-10 minutes.
3Add the minced garlic to the pot and cook for an additional 1-2 minutes until fragrant, taking care not to burn the garlic.
