1Prepare all ingredients: Dice the Bacon, Mexican chorizo, Beef sirloin, Pork loin, and Ham into small, uniform pieces. Dice the White onion, Green bell pepper, Tomatoes, and Jalapeño peppers. Mince the Garlic.
2Heat a large, heavy-bottomed pan or a traditional discada cooking disc over medium-high heat. Add the Bacon and cook until crispy. Remove the crispy Bacon with a slotted spoon and set aside, leaving the rendered fat in the pan.
3Add the Mexican chorizo to the pan with the bacon fat. Cook, breaking it up with a spoon, until browned and cooked through. Remove the cooked Mexican chorizo and set aside.
