1Rinse the Dried cannellini beans thoroughly and place them in a large bowl. Cover with cold water and let them soak for at least 12 hours or overnight. Drain and rinse again before use.
2Prepare the Cured pork rinds by placing them in a pot, covering with cold water, and bringing to a boil. Simmer for 15 minutes, then drain and rinse under cold water. Scrape any remaining bristles or impurities from the rinds with a sharp knife. Cut the cleaned Cured pork rinds into 2-3 cm pieces.
3Finely dice the Yellow onion, Carrot, and Celery stalk to create a soffritto base. Mince the Garlic cloves and finely chop the Fresh rosemary sprigs.
