1In a large bowl, combine Maida and 50 grams Ghee. Rub the Ghee into the Maida with your fingertips until the mixture resembles breadcrumbs.
2Add 5 grams Salt and gradually add Water, kneading to form a semi-stiff dough. Cover the dough with a damp cloth and let it rest for 30 minutes.
3Coarsely crush the Fresh pigeon peas using a mortar and pestle or a food processor, ensuring some texture remains.
