1Pat the Shrimp dry with paper towels. Season the Shrimp with 1 gram of Salt and 1 gram of White pepper.
2Crack the Eggs into a small bowl, add 1 gram of Salt, and whisk until well combined.
3Separate the white and green parts of the Scallions. Finely chop the white parts of the Scallions and set aside. Slice the green parts of the Scallions into thin rings for garnish and set aside. Mince the Garlic and Ginger.
