1Soak dried shiitake mushrooms and dried shrimp in separate bowls of warm water until softened, about 30 minutes. Reserve the mushroom soaking liquid.
2Grate daikon radish into fine strands.
3Drain and finely dice the rehydrated dried shiitake mushrooms. Finely chop the rehydrated dried shrimp. Dice Chinese sausage into small cubes. Mince ginger. Chop scallions, separating the white and green parts.
