1Rinse Idli rice, Urad dal, and Fenugreek seeds thoroughly under running water. Soak them together in ample water for 4-6 hours.
2Drain the soaked Idli rice, Urad dal, and Fenugreek seeds. Grind them in a wet grinder or high-speed blender with just enough water to form a smooth, thick batter, similar to idli batter. Add Salt during grinding.
3Transfer the batter to a large bowl, cover it, and let it ferment in a warm place for 8-12 hours or overnight, until it doubles in volume and becomes slightly sour.
