1Thoroughly clean the fresh mussels by scrubbing their shells and removing any beards. Discard any fresh mussels that are open and do not close when tapped.
2In a large pot or deep skillet, heat the extra-virgin olive oil over medium heat. Add the garlic and red pepper flakes and sauté until the garlic is fragrant, about 1-2 minutes, being careful not to burn it.
3Add the cleaned fresh mussels to the pot and pour in the dry white wine. Cover immediately and cook for 3-5 minutes, shaking the pot occasionally, until all the fresh mussels have opened. Discard any fresh mussels that remain closed.
