1Thoroughly clean the Fresh mussels: scrub their shells, remove any beards, and discard any open mussels that do not close when tapped.
2In a large, deep pot or pan, heat the Extra-virgin olive oil over medium heat. Add the sliced Garlic and Red chili flakes. Sauté for 1-2 minutes until fragrant, being careful not to burn the Garlic.
3Add the cleaned Fresh mussels to the pot. Pour in the Dry white wine. Cover the pot tightly and cook over high heat for 3-5 minutes, or until all the Fresh mussels have opened. Discard any Fresh mussels that remain closed.
