1Clean the Prawns: Rinse Prawns thoroughly. Using kitchen shears, trim the antennae and legs. Devein the Prawns by making a shallow cut along the back and removing the dark intestinal tract. Pat the Prawns dry with paper towels.
2Sear the Prawns: Heat 40 grams of Vegetable oil in a wok over high heat until shimmering. Add the dried Prawns in a single layer and sear for 1-2 minutes per side until they turn bright red and are slightly charred. Remove the Prawns from the wok and set aside.
3Sauté Aromatics: Reduce heat to medium. Add the remaining 20 grams of Vegetable oil to the wok. Add the sliced Ginger, smashed and roughly chopped Garlic, and the white parts of the Scallions. Sauté for 30 seconds until fragrant.
