Ensure the Whole lamb is thoroughly cleaned and patted dry, both inside and out.

Finely chop the Fresh rosemary and Fresh sage. Crush the Garlic cloves.

In a small bowl, combine half of the chopped Fresh rosemary, Fresh sage, and crushed Garlic with 50g of Extra-virgin olive oil, 20g of Sea salt, and 5g of freshly ground Black peppercorns to create an aromatic rub.
