1Thoroughly wash the 1000g of short-grain rice until the water runs clear. Soak the washed short-grain rice in water for at least 2 hours, then drain.
2Cook the soaked short-grain rice in a rice cooker or pot with an equal amount of water (by volume). The cooked short-grain rice should be slightly firmer than usual eating rice.
3Spread the cooked short-grain rice thinly on a clean tray or large plate and allow it to cool completely to room temperature (around 25°C).
