1Cut the Boneless skinless chicken thighs into bite-sized pieces, approximately 3-4 cm. In a bowl, combine the chicken with 15g Soy sauce, 10g Minced garlic, Minced ginger, and Black pepper. Mix well and let marinate for at least 15 minutes.
2While the chicken marinates, prepare the sauce. In a small saucepan, combine Gochujang, Gochugaru, 20g Soy sauce, Rice vinegar, Sugar, Corn syrup, 15g Minced garlic, and Sesame oil. Whisk until well combined.
3Heat the sauce mixture over medium heat, bringing it to a gentle simmer. Cook for 3-5 minutes, stirring occasionally, until the sauce thickens slightly. Remove from heat and set aside.
