1To prepare the winter melon filling, peel, deseed, and finely dice the Winter melon. Boil the diced Winter melon in water until translucent and very soft, about 15-20 minutes. Drain thoroughly and squeeze out as much excess water as possible.
2Transfer the cooked Winter melon to a non-stick pan and mash it well. Add 150 grams of Granulated sugar and cook over medium heat, stirring constantly, until the sugar dissolves and the mixture thickens.
3In a small bowl, mix 50 grams of Water with the Glutinous rice flour to create a smooth slurry. Stir this slurry into the Winter melon mixture in the pan. Continue to cook, stirring, until the mixture becomes very thick and translucent.
