1Slice the Bitter melon in half lengthwise, scoop out the seeds and pith using a spoon, then slice into 5mm thick crescent moons. Place the Bitter melon slices in a bowl, sprinkle with 3 grams of Salt, massage gently, and let sit for 10 minutes. Rinse thoroughly under cold water and pat dry.
2Wrap the Firm tofu in paper towels and place a weight on top for 15 minutes to press out excess water. Tear the Firm tofu into bite-sized pieces.
3In a small bowl, combine the Dashi stock, Koikuchi soy sauce, Mirin, Sake, and Sugar. Whisk until the Sugar is dissolved.
