1Soak the Gelatin sheets in a bowl of cold water for 5-10 minutes until softened.
2In a medium saucepan, combine the Heavy cream and 80 grams of Granulated sugar. Split the Vanilla bean lengthwise and scrape out the seeds, adding both the pod and seeds to the cream mixture.
3Heat the Heavy cream mixture over medium heat, stirring occasionally, until it just begins to simmer around the edges. Do not boil.
