Wash the Broccoli thoroughly. Trim off the tough end of the stalk. Separate the florets and peel the tender part of the stalk, then dice it into small pieces.

Finely chop the Onion and mince the Garlic.

In a large pot or Dutch oven, heat the Extra-virgin olive oil over medium heat. Add the chopped Onion and cook until softened and translucent, about 5-7 minutes. Add the minced Garlic and cook for another minute until fragrant, being careful not to brown it.
