1Wash Jasmine rice thoroughly under cold running water until the water runs clear. Place the washed Jasmine rice in a heatproof bowl suitable for steaming. Add water and let it soak for 20 minutes.
2While the Jasmine rice soaks, prepare the cured meats. Slice cured Chinese sausage into thin diagonal rounds. Slice cured Chinese pork belly into thin pieces.
3Peel and thinly slice ginger. Chop half of the scallions into 5cm lengths; finely chop the remaining scallions for garnish.
