Soak Urad dal in water for 4-5 hours. Drain completely before grinding.

In a wet grinder or food processor, grind the soaked Urad dal with Green chili, Ginger, Asafoetida (hing) (for vada), Cumin seeds (for vada), and Salt (for vada) to a smooth, thick, and fluffy batter. Add very little water, just enough to facilitate grinding.

Transfer the batter to a bowl, add Fresh cilantro (for vada), and mix well.
