1In a bowl, combine Pork spareribs with 15g Shaoxing wine, 15g Light soy sauce, 5g Dark soy sauce, 10g Cornstarch, 5g Granulated sugar, 1g White pepper, and 5g Sesame oil. Mix well and marinate for at least 30 minutes.
2Prepare the Fermented black beans by rinsing them under cold water and lightly mashing them. Mince 15g Garlic and 10g Ginger. Slice the 20g white parts of Scallions. Slice the Red bell pepper into thin strips.
3Bring a large pot of water to a rolling boil. Add Fresh egg noodles and cook according to package instructions until al dente. Drain immediately, rinse with cold water to stop cooking, then toss with 10g Light soy sauce, 5g Sesame oil, and 1g White pepper to prevent sticking. Set aside.
