1Rinse 200g short-grain white rice thoroughly until the water runs clear. Soak the short-grain white rice in cold water for at least 1 hour, or preferably overnight.
2Drain the soaked short-grain white rice completely.
3Finely dice 50g carrot, 50g zucchini, and the rehydrated dried shiitake mushrooms into small, uniform pieces.
