1To prepare dashi stock, add Kombu and Water to a pot. Heat over medium-low heat until just before boiling. Remove the Kombu.
2Bring the Water to a boil, then turn off the heat. Add Katsuobushi to the hot Water and let it steep for 5 minutes.
3Strain the dashi stock through a fine-mesh sieve, discarding the Katsuobushi. Set aside the clear dashi stock.
