1Thoroughly clean the Leeks, removing the tough green parts and the root end. Slice the white and light green parts of the Leeks into thin rounds.
2Peel the Potatoes and cut them into small, even cubes.
3In a large pot, heat the Extra-virgin olive oil over medium heat. Add the peeled and finely minced Garlic and sauté gently until fragrant, about 1 minute, being careful not to brown it.
