1. To prepare the Kadai Masala, dry roast the whole coriander seeds and dry red chilies in a pan over medium heat until fragrant, about 2-3 minutes. Allow to cool, then grind them coarsely using a mortar and pestle or a spice grinder.

2. Dice the Paneer into 1-inch cubes. Cut the Red bell pepper, Green bell pepper, and Yellow bell pepper into 1-inch squares. Finely chop the Onion and roughly chop the Tomato.

3. Heat the Ghee in a heavy-bottomed kadai (wok) over medium heat.
