Preheat your oven to 170°C (340°F). Grease and flour a 24cm springform pan, or line the bottom with parchment paper.

In a large heatproof bowl, combine the large eggs, granulated sugar, vanilla extract, and salt. Place the bowl over a saucepan of simmering water (bain-marie), ensuring the bottom of the bowl does not touch the water.

Whisk the egg mixture constantly with a hand whisk or electric mixer on low speed until it is warm to the touch (about 40-45°C or 105-115°F) and the sugar has dissolved. This will take about 5-7 minutes.
