1Cut chicken thighs into bite-sized pieces. In a bowl, combine chicken thighs with Shaoxing wine, light soy sauce (for marinade), corn starch, and white pepper. Mix well and marinate for 15 minutes.
2Slice ginger and garlic. Cut fresh red chilies into thin rounds. Cut scallions into 5 cm segments, separating the white and green parts.
3In a small bowl, whisk together light soy sauce (for sauce), Chinkiang vinegar, sugar, and dark soy sauce. Set the sauce mixture aside.
