1To prepare the nukadoko (rice bran bed), first gently wipe the kombu with a damp cloth. Slice the daikon radish into thick rounds and grate the ginger.
2In a large, clean container, combine the Rice bran and 100 grams of the Salt. Mix thoroughly with your hands.
3Gradually add the Water to the rice bran mixture, kneading well after each addition until the mixture has the consistency of wet sand and can be squeezed into a ball without crumbling.
