1Crumble the Chhena thoroughly in a large bowl, ensuring there are no lumps. It should be smooth and fine.
2Add Maida, Sooji, and Baking soda to the crumbled Chhena. Mix gently until just combined.
3Transfer the Chhena mixture to a clean, flat surface and knead it with the heel of your palm for 8-10 minutes until it becomes smooth and pliable. Do not over-knead.
