Preheat your oven to 180°C (350°F). Line a 20cm round cake pan with parchment paper.

In a large bowl, whisk the Eggs and 120g Granulated sugar (for sponge cake) until very pale, thick, and fluffy, about 8-10 minutes. The mixture should form a ribbon when the whisk is lifted.

Gently fold the 120g 00 flour (for sponge cake) and Salt into the egg mixture in two additions, being careful not to deflate the batter.
