1In a large bowl, dissolve 15 grams of fresh yeast and 10 grams of granulated sugar in 350 grams of lukewarm water. Let it sit for 5 minutes until foamy.
2In a separate large bowl, combine 500 grams of 00 flour and 5 grams of fine sea salt.
3Gradually add the yeast mixture to the flour mixture, stirring with a wooden spoon until a very soft and sticky dough forms. Do not overmix.
