1In a large bowl, whisk together the Buttermilk, Besan, Turmeric powder, and half of the Salt until no lumps remain. Set aside.
2In a small mixer grinder, combine the Green chilies, Ginger, and 5 grams of Cumin seeds. Grind to a coarse paste, adding a splash of water if needed.
3Place the diced Bottle gourd in a saucepan with just enough water to cover it. Add the remaining Salt and cook over medium heat until the Bottle gourd is tender, about 8-10 minutes. Drain any excess water, leaving the cooked Bottle gourd in the pan.
