1Thoroughly clean the Carp fish head, removing any scales and blood clots. Pat it very dry with paper towels.
2Marinate the Carp fish head with Shaoxing wine and 1 gram of White pepper for 10 minutes.
3Slice 50 grams of Ginger into thin rounds and julienne the remaining 50 grams of Ginger for garnish.
