1Wash the Japanese short-grain rice thoroughly under cold running water until the water runs clear. Place the washed Japanese short-grain rice in a bowl, cover with fresh water, and let it soak for 30 minutes. Drain well before use.
2Finely dice the Onion and Carrot. Thinly slice the Shiitake mushrooms. Mince the Garlic and Ginger.
3Pat the Shrimp and Scallops dry with paper towels. Season the Shrimp and Scallops lightly with 2 grams of Salt and 1 gram of Black pepper.
