1To prepare the Ghevar batter, take 50 grams of Ghee in a large bowl. Add 100 grams of Ice cubes to the Ghee and rub vigorously with your palms until the Ghee turns white and creamy.
2Remove the Ice cubes. Gradually add 250 grams of All-purpose flour, alternating with 50 grams of Milk, mixing continuously to avoid lumps.
3Slowly incorporate 600 grams of Cold water into the mixture, stirring constantly to form a very thin, smooth batter. Add 10 grams of Lemon juice and mix well. The batter should be of pouring consistency, similar to a thin crepe batter.
