1Rinse 400g glutinous rice thoroughly until water runs clear. Soak the rinsed glutinous rice in cold water for at least 4 hours, or preferably overnight.
2Soak 30g dried shiitake mushrooms in hot water for 30 minutes until softened. Reserve the mushroom soaking liquid. Remove stems and slice the mushroom caps.
3Soak 50g lotus leaves in hot water for 20 minutes until pliable. Gently unfold and rinse each lotus leaf.
