1Rinse the Wheat berries thoroughly under cold running water. Place the Wheat berries in a large bowl, cover with plenty of cold water (at least three times their volume), and let them soak for a minimum of 24 hours, changing the water once or twice.
2After soaking, drain the Wheat berries and transfer them to a large pot. Cover with fresh cold water, bring to a boil, then reduce heat to low, cover, and simmer for approximately 60-90 minutes, or until the Wheat berries are tender but still slightly al dente.
3Once cooked, drain the Wheat berries thoroughly and spread them on a baking sheet or large platter to cool completely. This helps them dry slightly and prevents the final dish from becoming watery.
