1Rinse the Dried white fish thoroughly under cold water to remove any surface impurities and excess salt. Soak the Dried white fish in fresh cold water for 30 minutes to rehydrate slightly and reduce saltiness, then drain well and pat dry with paper towels.
2Peel and thinly slice the Ginger. Peel and finely mince the Garlic. Cut the Scallion into 2-inch segments. Remove stems from Dried chili and slice them in half if desired for more heat.
3Heat 100 grams of Vegetable oil in a wok over medium-high heat until shimmering. Add the dried white fish and fry until golden brown and crispy, about 3-5 minutes. Remove the fried Dried white fish with a slotted spoon and set aside, draining excess oil.
