1Wash the Urad dal thoroughly and soak it in sufficient water for at least 4 hours, or preferably overnight.
2Drain the soaked Urad dal completely. Grind the Urad dal with Rice flour and Orange food color in a high-speed blender or grinder, adding minimal Water (about 50g from the syrup Water) until a very smooth, thick, and consistent batter is formed. The batter should be thick enough to hold its shape when piped.
3Transfer the batter to a large bowl and whisk vigorously by hand or with an electric mixer for 10-15 minutes until it becomes light, fluffy, and almost doubles in volume. This aeration is crucial for the texture of Amriti.
