1Combine 20 grams of Granulated Sugar and 20 grams of Water in a small saucepan. Heat gently over low heat until the Granulated Sugar dissolves completely, creating a simple syrup. Remove from heat and let it cool completely.
2In a mixing glass or small pitcher, combine 30 grams of Fresh Yuzu Juice, 80 grams of White Peach Puree, 70 grams of Junmai Sake, and the cooled simple syrup. Stir well to combine all ingredients thoroughly.
3Chill the mixture in the refrigerator for at least 15 minutes to ensure it is very cold.
