1In a medium saucepan, combine the whole milk, half of the granulated sugar (50 grams), and the scraped seeds from the vanilla bean along with the pod. Heat over medium heat until just simmering, stirring occasionally. Do not boil.
2While the milk heats, finely chop the dark chocolate and set aside in a heatproof bowl.
3In a separate bowl, whisk together the egg yolks, the remaining granulated sugar (50 grams), and the cornstarch until smooth and pale.
