1Wash Japanese short-grain rice thoroughly under cold running water until the water runs clear, then drain well.
2Combine the washed Japanese short-grain rice and Water in a rice cooker or heavy-bottomed pot and cook according to instructions until the rice is tender.
3While the rice cooks, prepare the sushi vinegar by combining Rice vinegar, Granulated sugar, and Salt in a small bowl. Stir until the sugar and salt are completely dissolved.
