1In a large bowl, combine the 00 flour, granulated sugar, baking powder, and lemon zest. Mix well.
2Add the extra-virgin olive oil, dry white wine, and egg yolk to the dry ingredients. Mix with a fork until a shaggy dough forms, then turn it out onto a lightly floured surface.
3Knead the dough for about 8-10 minutes until it is smooth and elastic. Wrap the dough in plastic film and let it rest at room temperature for at least 30 minutes.
