1Ensure the Dried Anhui stone ear mushroom is fully rehydrated, thoroughly rinsed, and any tough parts removed. If large, slice the mushroom into bite-sized pieces.
2Thinly slice the Garlic and Fresh ginger. Cut the white and light green parts of the Scallions into 2-inch segments, reserving the green tops for garnish.
3Heat a wok over high heat until smoking. Add the Vegetable oil, swirling to coat the surface.
