1To prepare the candied walnuts, combine 100 grams of Granulated sugar and 50 grams of Water in a small saucepan over medium heat. Stir until the Granulated sugar is fully dissolved and the syrup comes to a boil.
2Add the Walnuts to the hot syrup, stirring continuously to ensure they are evenly coated. Remove from heat.
3Heat 250 grams of Vegetable oil in a wok over medium heat to about 150°C. Carefully add the coated Walnuts to the hot oil and fry, stirring occasionally, until they turn golden brown and crispy. This usually takes 3-5 minutes. Remove the Walnuts with a slotted spoon and drain thoroughly on a wire rack lined with paper towels, allowing them to cool and crisp up.
