1Pat the Shrimp dry with paper towels and season with Salt and Black pepper.
2Heat the Vegetable oil in a large skillet over medium heat. Add the White onion and Red bell pepper and sauté until softened, about 5 minutes.
3Add the Garlic and Roma tomato to the skillet and cook for another 3-4 minutes, until the tomato softens and releases its juices.
