1Thoroughly wash the Wasabi stems to remove any soil. Trim off any discolored or tough parts.
2Finely chop the cleaned Wasabi stems into small pieces, approximately 0.5 cm in length.
3Place the chopped Wasabi stems in a bowl, sprinkle with 5 grams of Salt, and mix well. Let stand for 30 minutes to draw out excess moisture.
